Turkey Meatloaf Muffins

Hey y’all! Coming at you with another tried and true recipe! This is one of those meals that has people asking for the recipe nonstop (and for good reasons!), so I figured I would share it on here! These Turkey Meatloaf Muffins are high protein and macro friendly. A lightened-up version of one of your favorite comfort foods! It doesn’t get much better than that does it? Oh wait, it does! These muffins are also a great kid-friendly option, they are husband-approved, and they make for one easy meal prep! The other thing that I love about these muffins is that you can switch them up with different veggies every time. It is no wonder that we have these for dinner at our house AT LEAST once a week!
Like I said, I have made these mini meatloaves more times than I can count. They are quick, easy and take minimal prep! The ingredients list is clean and simple which y’all know I love! It is also good to note that you can swap the turkey out for lean beef. I do recommend trying the turkey though! I promise you will not regret it.
These go great with any sides, honestly! Some of the sides that we love these muffins with are brussels sprouts, okra, squash and zucchini mix, lentils, sweet potatoes, quinoa, brown rice… the list goes on and on!
Like I brought up earlier, these are great for those of you who meal prep because they reheat really well, and they are already pre-portioned. These are always a hit in our house as leftovers! It is honestly ridiculous how much I look forward to leftover Turkey Meatloaf Muffins.
Time to get to the recipe! I am going to list the brands we use (just because I truly love them and their ingredients), but feel free to switch it up as you wish! Hope you give these a try soon! I promise you and your entire family will love them!
Ingredients:
· 1 lb of 99% fat-free ground turkey
· 2 slices of bread, toasted and crumbled into breadcrumbs (we love Ezekiel bread – the GF bread is great too!)
· 1 medium sweet onion, chopped
· 2 egg whites
· ½ cup barbecue sauce (our favorite brands are – Primal Kitchen, Tessemae’s, and New Primal Noble Made)
· Additional Mix-in Options: mushrooms, bell pepper, spinach.. have fun with it! Keep it interesting!
· Ground Pepper and Salt to Taste
Instructions:
· Preheat oven to 350 degrees.
· Spray a muffin tin with avocado oil. (I use a 12-hole muffin tin)
· In a large bowl, add ground turkey, breadcrumbs, onions, any mix-ins, egg whites, barbecue sauce, and salt and pepper.
· Mix everything together until well-blended.
· Add the meatloaf mixture to the muffin pan, flattening out the tops.
· Bake for 40 minutes. ENJOY!
*When serving you can top off the muffins with more barbecue sauce. Wes loves doing that with his!
